The first thing you want to do for your Aussie meat pie recipe is to decide which fillings you want for your pies. You can choose from chicken, beef, lamb, or cheese. Once you have decided on your base ingredient, choose a few complementary flavors to add to your recipe. These flavors can include onions, peppers, tomatoes, zucchini, or any other vegetables that you see fit.
For our recipe below, we will do a classic Australian meat pie. The classic meat pie uses minced beef and onion to create an authentic flavor.
Step 1: Choose Your Pie Crust
This step can be done the short way or the long way. You choose which is best for you. If you want to make your Australian meat pie with all homemade ingredients from scratch, you will want to choose the longer version. This way of making meat pies takes more time but creates a tasty flaky outer crust. You will have to make a homemade batch of shortcrust pastry dough.
To make your homemade pastry dough you will need white flour, cold butter, cold water, and salt. Add your white flour, cold butter, and salt to a food processor. Blitz the mix until it is crumbly in texture. Turn the processor on again and add your cold water. The mixture should start to form into a ball. Remove the ball of dough and wrap it in plastic wrap. Refrigerate the ball of dough for one hour.
If you would rather have a more simple way to make your Australian meat pie, you can use frozen shortcrust pastry sheets. These pastry sheets can be purchased in the freezer section of your local grocery store. Simply thaw before using them.
Step 2: Create Your Pie Filling
Gather your ingredients for your pie filling. Your filling is what goes in the center of your pie. It is where all the flavor is. For your meat pie filling, you will need to gather all of your ingredients including minced beef, salt, black pepper, olive oil, chopped white onion, chopped garlic, white flour, beef stock, paprika, tomato paste, Worcestershire sauce, and apple cider vinegar.
Step 3: Prepare Your Filling
To prepare your filling you will want to cook your minced meat. First, season your meat with salt, pepper, and paprika. Use a large skillet and heat it to medium-high. Add about one tablespoon of olive oil to the pan then add the meat to your skillet. Cook it until it is brown on the outside edges. Be sure not to burn your meat, if it starts to burn reduce the temperature of your stove to medium. This process should take about 5 to 7 minutes.
Once your meat is cooked thoroughly, add your chopped onion and garlic. Sauté the mix on medium heat until the onion is caramelized. You should see caramelization after about 5 minutes, then you can add your beef stock, Worcestershire sauce, apple cider vinegar, and tomato paste. Stir occasionally. Allow this mixture to come to a boil, then reduce the heat to low. Cook for about 15 minutes.
In a separate bowl, add 2 tablespoons of white flour to 1 tablespoon of water mix thoroughly until a paste is formed. Add this paste to your meat mixture and whisk it until the sauce of the meat has a gravy-like texture. Add one cup of water. Cook the mix for another 15 minutes. Remove from heat and allow it to sit while you complete the next step.
Step 4: Assemble Your Pies
Remove your dough from the refrigerator and roll it out with a rolling pin. Use a nonstick muffin pan to cook your meat pies, this will keep them small and easy to eat. Cut out 6-inch circles of pastry dough and line each portion of your muffin pan. Use your hands to press the dough into the creases of the muffin pan. be sure there is no space between the dough and the pan.
Using a spoon, take a scoop of your filling mix and add it to your dough-lined muffin pan. Repeat this process until all muffin pan sections are full.
No meat pie is complete without a flaky top layer of crust, so use a knife or a cookie cutter to cut a layer of dough about 3 inches in diameter for the top of your pies. Brush each piece of dough with an egg and place the layer of dough over each pie. Brush the top with egg as well.
Place your meat pies in a 350 degree preheated oven and bake for 25 to 30 minutes. Remove and enjoy.
